Shoyu Koji is a fermented, Japanese seasoning. Koji is packed with probiotics & enzymes like amylase, lipase, & protease which help to effectively digest other foods & bring out the natural flavors in all foods. This is why koji is such a versatile condiment. You can use it as dipping sauce, in stir-fried vegetables, a base for salad dressings, as a marinade for meat, fish or root vegetables.
