Umami Shoyu Koji ~ New Fermented Item

Shoyu Koji is a Japanese, fermented seasoning. It is made from fermented rice malt and tamari sauce. We add dried kelp and bonito flakes for extra Umami in Shoyu Koji. Use it as dipping sauce, in stir-fried vegetables, as a marinade for meat, fish or root vegetables. I also adore using it as a base for delicious salad dressings.
