Traditionally Wild-Fermented Escabeche! Growing up in Central Texas, this lovely pickled, lightly spicy condiment was ever-present. It wasn't wild-fermented and probiotically-rich in my youth but, we create what we want to see....or eat. It takes tacos, salads & any meat dish up more than a few notches!
